Lemon Seed Snack Bites

These Lemon Seed Snack Bites are nutritious and delicious! Made of figs, seeds, and coconut, they are jam-packed with flavor.

If you like the energy bites from your local smoothie or coffee shop, you are going to love these homemade snack balls. They are so quick and easy to make too. You’ll want to make up a batch every week!

Lemon Seed Snack Bites Recipe

Makes 12-14 balls, depending on size.

Ingredients:

  • 6 figs, soaked in water
  • 1/2 cup sesame seeds, hulled
  • 1/2 cup shredded coconut
  • 2 Tbsp lemon juice
  • 2 Tbsp chia seeds
  • 1 Tbsp flaxseed
  • 1 tsp lemon zest
  • 1 Tbsp coconut oil, for your hands
Lemon Seed Snack Bites

Directions:

Drain the figs.

In a food processor combine the figs and sesame seeds. Blend until mostly combined (leaving a few chunks for texture as desired).

Scrape the mixture into a bowl and add the remaining ingredients (except for the coconut oil). Mix well.

Line a tray with parchment paper and rub some of the coconut oil on your hands (to prevent sticking).

Rolling the lemon seed snack bites

Use your hands to portion out the bite-size snacks and roll into a ball.

Place in the freezer for 30 minutes to set.

Store in the fridge or the freezer, but consume at room temperature or refrigerated.
