Oven-baked zucchini sticks, also known as zucchini fries, are a tasty and nutritious snack. Serve them as a party appetizer or an afternoon snack with your favorite dip.
Zucchini sticks are really easy to make and with the Panko coating, they come out tender-crisp and delicious. Bake them in your oven or air fryer.
Easy Baked Zucchini Sticks
Ingredients
1 cup Panko
½ cup grated Parmesan cheese
½ teaspoon paprika
1 teaspoon Italian seasoning
Salt and pepper to taste
4 medium zucchini
½ cup flour
2 eggs, beaten
1 tablespoon milk
Instructions
Preheat oven to 425 degrees F or air fryer to 400 degrees F. Line a baking sheet with parchment paper or use cooking spray. You can also spray a cooling rack and place that in the baking sheet. Raising the zucchini fries up on the rack can help prevent them from getting soggy on the bottom and add to the crispiness.
Stir together the Panko, Parmesan, paprika, Italian seasoning, and salt and pepper in a bowl.
Beat eggs with milk in another bowl.
Finally, place the flour in a third bowl. You may prefer to use shallow bowls if possible as it can make the coating process easier.
Wash the zucchini and trim off the ends. Cut the zucchini into sticks (you don’t need to peel first).
Dredge the zucchini fries with flour, then dip into the egg mixture, and finally, coat with Panko mixture. Be sure to press the coating mixture onto the zucchini well. Pro tip: Use one hand to dip the zucchini into the egg mixture and your other hand to dip it into the flour and Panko mixture. This helps keep it from sticking to your fingers.
Place the zucchini on the baking sheet and bake for 25-30 minutes in the oven. I find that turning them at the halfway point helps ensure even cooking and crispiness all over. If using the air fryer, bake for approximately 15 minutes.
Serve with your favorite dipping sauce.
What to Serve Zucchini Sticks With
Nearly any dipping sauce you like will work with these zucchini fries. Here are a few suggestions:
- Ranch dip
- Tzatziki dip
- Stir together your favorite barbecue sauce and mayonnaise. We like a 1:2 ratio.
- Soy ginger dipping sauce
- Ketchup
