Ingredients
  

  • 6 figs soaked in water
  • 1/2 cup sesame seeds hulled
  • 1/2 cup shredded coconut
  • 2 Tbsp lemon juice
  • 2 Tbsp chia seeds
  • 1 Tbsp flaxseed
  • 1 tsp lemon zest
  • 1 Tbsp coconut oil for your hands

Instructions
 

  • Drain the figs.
  • In a food processor combine the figs and sesame seeds. Blend until mostly combined (leaving a few chunks for texture as desired).
  • Scrape the mixture into a bowl and add the remaining ingredients (except for the coconut oil). Mix well.
  • Line a tray with parchment paper and rub some of the coconut oil on your hands (to prevent sticking).
  • Use your hands to portion out the bite-size snacks and roll into a ball.
  • Place in the freezer for 30 minutes to set.
  • Store in the fridge or the freezer, but consume at room temperature or refrigerated.
