Strawberry Banana Cake

Despite not having any eggs in it, this strawberry banana cake is still really fluffy and delicious. We have also offered options for the dairy products as well so you can make this a vegan cake.

Strawberries and bananas go so well together to make a really tasty dessert. This is a really easy cake to make and doesn’t require any special baking or decorating skills.

Strawberry Banana Cake

Equipment

Large bowl

Whisk

8×8 baking dish 

Ingredients

3/4 cup granulated sugar

1/3 cup vegetable oil 

1/4 cup milk 

2 teaspoons vanilla extract

2 ripe medium sized  bananas, mashed

1 1/2 cups all-purpose flour, scooped and levelled

2 teaspoons baking powder

1 cup diced strawberries

Glaze

1 cup powdered sugar

2-3 tbsp heavy cream

1 tsp vanilla extract

Instructions:

Instructions for the CAKE:

Preheat oven to 350F. 

Grease or spray an 8×8 baking dish with nonstick spray.

In a large bowl whisk together granulated sugar, oil, milk and vanilla.

Add in the mashed bananas and stir to combine.

Sift in flour and baking powder.

Use a rubber spatula to gently fold and mix it in.

Add the strawberries right before all of the flour disappears.

Stir until just combined (do not over mix)

Add to prepared baking dish

Bake for 40 mins.

Remove and let cool.

GLAZE:

To a small bowl, add powdered sugar, vanilla and heavy cream, stir until combined.  Add a teaspoon of heavy cream to thin it out if it’s too thick for your preference.

NOTES:

You can substitute the vegetable oil for liquid coconut oil and change the milk to almond milk to make this Vegan.
