Sherbet Cupcakes Recipe

This sherbet cupcakes recipe is SO delicious! No it doesn’t have sherbet in the cupcakes but the flavors and colors will remind you of that yummy multi-colored sherbet you can buy at the store.

These use a shortcut (boxed cake mix) and a super easy decorating technique so even if you aren’t a baking pro, they’re really easy to make. Perfect for a birthday party, kids especially will love how colorful these are.

By the way, do you pronounce it sure-bit or sure-bert?

Sherbet Cupcakes Recipe

Equipment Needed

  • Cupcake liners
  • Cupcake pan
  • Mixing bowl
  • 3 small bowls
  • Small ice cream scoop
  • Wire cooling rack
  • Stand mixer or hand mixer
  • Piping bag with star tip

Ingredients

For Cupcakes

  • 1 box of white or vanilla cake mix (plus eggs, oil, and water as directed on box)
  • 1 drop orange cake flavoring
  • 1 drop strawberry cake flavoring
  • 1 drop lime cake flavoring
  • 1 drop neon green food coloring
  • 1 drop pink food coloring
  • 1 drop orange food coloring

Frosting

  • 3 cups powdered sugar
  • 3-5 Tbsp heavy cream
  • ½ cup unsalted butter
  • 1 tsp. vanilla extract

For Serving

  • Maraschino cherries
  • Waffle cones
  • Cake sprinkles
  • Nut toppings for garnish (optional)

Instructions

For Cupcakes

Preheat oven to 350 F. Place cupcake liners in a cupcake pan.

In a mixing bowl, add the cake mix with the eggs, oil and water as directed on the box. Stir to combine.

Split the cake batter into 3 small bowls.

In the first bowl, add 1 drop of neon green food coloring and 1 drop of lime flavoring. Stir to combine.

In the second bowl, add 1 drop of orange food coloring and 1 drop of orange flavoring. Stir to combine.

In the third bowl, add 1 drop of pink food coloring and 1 drop of strawberry flavoring. Stir to combine.

Use a small ice cream scoop, add 1 scoop of each cake batter to the cupcake liners, alternating flavors, filling the cupcake liners until they are 2/3 full.

Bake for 20 minutes or until baked through, check with a toothpick.

Let the cupcakes cool in the pan for 5 minutes, then remove to a wire rack to continue cooling.

For Frosting

Add all frosting ingredients to a large mixing bowl.

Mix on low speed for 2-3 minutes until ingredients are combined.

Then mix on medium speed for an additional 3 minutes until frosting is peaking, meaning that it is holding its shape.

Using a piping bag and a star tip, frost the cupcakes.

Garnish with cherries, waffle cones, sprinkles, and chopped nuts. Enjoy!
