Believe me when I tell you that this pumpkin seed brittle is out of the world. I made it originally as a garnish for Pumpkin Bundt Cake, but I had to make a second batch the very next day. That’s how good it was!
Pumpkin Seed Brittle
I could eat this stuff every single day. In fact, that second batch I mentioned? I ate all of it. By myself.
(Seriously, plan to make lots – you won’t want to share!)
This recipe has only a few ingredients – 4 to be exact. It’s super easy to make and is perfect for gift-giving.
Make sure you make lots, to put out at Thanksgiving, or at Halloween, or to package up for Christmas presents. Yum!

Ingredients:
2 tablespoons butter
1 cup sugar
1/2 tsp salt
3/4 cup pumpkin seeds
Instructions:
Melt the butter. Add sugar and salt.
Stir over low to medium heat until they are dissolved completely.
Remove the pan from the heat and stir in the seeds.
Make sure the seeds are well coated.
Line a rimmed baking sheet with parchment paper.
Pour in the mixture, using a rubber spatula if needed to spread it out.
Refrigerate for 30 minutes. Break into pieces.
Why not also try…
Not a big fan of pumpkin seeds? You can try substituting other seeds or nuts for them. Peanut brittle is traditional, but cashew and pecan brittle are two of my favorites.
Want to spice things up a bit? Try adding a pinch of cayenne pepper to the recipe.
