Hatch Chile Spiced Roasted Potatoes

These Hatch Chile Spiced Roasted Potatoes are packed with flavor. Delicious roasted potatoes with a kick of spice, these go well with nearly anything, but we especially like them with this Grilled Lime-Marinated Flat Iron Steak or Herbed Grilled Pork Chops.

These have a little bit of heat and a ton of taste and they’re incredibly easy to make. This Carolina coleslaw is a great cooling dish to serve along with this potato dish.

Hatch Chile Spiced Roasted Potatoes

Yield: 5-6 servings

Prep Time: 10 min

Bake Time: 40 min

Total Time: 50 min

Ingredients:

2 pounds small baby potatoes, multi-color

3 tbsp Extra virgin olive oil

1 tsp Garlic powder

2 tbsp Hatch Chili Spice

2 tbsp Mexican Fiesta Spice

1/2 tsp Kosher salt

½ tsp Ground black pepper

Non-stick Grill spray

Instructions:

Wash and clean the potatoes, then cut the potatoes in half.

Place the potatoes on a baking sheet covered with paper towels, and pat dry. Set to the side.

Preheat the oven to 400F

Spray the bottom of the pan with non-stick grill spray

In a large bowl add your potatoes, and olive oil. Toss to combine.

In a small bowl add all of your spices and whisk to combine.

Sprinkle ½ of your seasoning mix on top of the potatoes. Toss to mix

Place the potatoes on the baking sheet and sprinkle with the remaining spice mix.

Bake in the center of the oven, 30 to 40 minutes, until the potatoes can be easily pierced with a knife
