These Hatch Chile Spiced Roasted Potatoes are packed with flavor. Delicious roasted potatoes with a kick of spice, these go well with nearly anything. These have a little bit of heat and a ton of taste and they're incredibly easy to make.

Ingredients
  

  • 2 pounds small baby potatoes multi-color
  • 3 tbsp Extra virgin olive oil
  • 1 tsp Garlic powder
  • 2 tbsp Hatch Chile Spice
  • 2 tbsp Mexican Fiesta Spice
  • 1/2 tsp Kosher salt
  • ½ tsp Ground black pepper
  • Non-stick Grill spray

Instructions
 

  • Wash and clean the potatoes, then cut the potatoes in half.
  • Place the potatoes on a baking sheet covered with paper towels, and pat dry.
  • Set to the side.
  • Preheat the oven to 400F
  • Spray the bottom of the pan with non-stick grill spray
  • In a large bowl add your potatoes, and olive oil.
  • Toss to combine.
  • In a small bowl add all of your spices and whisk to combine.
  • Sprinkle ½ of your seasoning mix on top of the potatoes.
  • Toss to mix
  • Place the potatoes on the baking sheet and sprinkle with the remaining spice mix.
  • Bake in the center of the oven, 30 to 40 minutes, until the potatoes can be easily pierced with a knife
