Spread the love

This easy Waldorf salad recipe is based on the classic recipe but with some added ingredients to provide more nutrients.  It is packed with flavor and so easy to make! I love easy salads. They’re my go-to for busy weekday lunches but this makes a perfect side dish for nearly any meal too.

The Waldorf salad was created in the late 19th century at the Waldorf Astoria Hotel in New York City.  When I first began making these salads, I made them the original way with only apples, celery, and mayonnaise.  It has evolved into recipes with additional ingredients in it – often adding lettuce or spinach and some adding a protein like chicken.

Easy Waldorf Salad Recipe

In this version, I have added some additional fruit, the nuts and seeds, and have changed from using mayonnaise to yogurt in order to boost the nutritional content.

Makes 6 servings.

Time to prepare: 10 minutes.

Ingredients:

Dressing:

1 1/4 cups fat free Greek style yogurt

2 T. lemon juice

1 T. honey

Salad:

1/2 cup chopped pecans (toasted lightly) – a good substitute is walnuts

2 apples cut in 8ths and thinly sliced or diced – some fresh pear as a substitute or added to the salad is lovely as well

1 cup grapes, cut in half

1/2 cup dried cranberries

1/3 cup sunflower or pumpkin seeds

salt and pepper to taste

Optional additions: chopped celery, cooked chicken, hard boiled eggs, almonds, raisins

Instructions:

Like I said, this is incredibly easy to make. Simply mix all of the ingredients together.  Serve on a bed of lettuce.

You will love eating this salad as is, served over some salad greens, wrapped up in a flour tortilla, or stuffed into a pita.
