This easy Waldorf salad recipe is based on the classic recipe but with some added ingredients to provide more nutrients. It is packed with flavor and so easy to make!
1/2cupchopped pecanstoasted lightly – a good substitute is walnuts
2apples cut in 8ths and thinly sliced or diced – some fresh pear as a substitute or added to the salad is lovely as well
1cupgrapescut in half
1/2cupdried cranberries
1/3cupsunflower or pumpkin seeds
salt and pepper to taste
Optional additions: chopped celerycooked chicken, hard boiled eggs, almonds, raisins
Instructions
Simply mix all of the ingredients together. Serve on a bed of lettuce.
This is great eaten as is, served over some salad greens, wrapped up in a flour tortilla, or stuffed into a pita.
Notes
In this version, I have added some additional fruit, the nuts and seeds, and have changed from using mayonnaise to yogurt in order to boost the nutritional content.
