This easy blueberry shortcake recipe is barely even a recipe! We’re relying on ready-made dessert shells to cut down on the work and create a no-fuss dessert that is perfect for summer.
Obviously, you can make your own shortcake shells if you’d like, but this is a simple and delicious way to make a delicious summer dessert with very little work. Try using the blueberry mixture over ice cream, in a yogurt parfait, or on a slice of angel food cake.

Easy Blueberry Shortcake

Serves: 6
Prep: 15 Minutes
Chilling Time: 2 Hours
Ingredients:
1/2 cup sugar
1 lb. package blueberries
6 dessert shells
whipped topping for topping
Instructions:
Place blueberries into a bowl after washing.
Cover blueberries with half a cup of sugar and smash them with a potato masher. Place them into the fridge for at least two hours to overnight. This allows them to release more juice.
Plate a dessert shell and add some of the blueberry mixture and whipped topping. Add another dessert shell and top with more of the blueberries and whipped topping. Finally, top with a little more of the blueberry mixture. Serve right away!
