BBQ Tofu Tacos

If you’re looking for a vegetarian option for Taco Tuesday, we’ve got you covered with these BBQ Tofu Tacos. Easy to make and really tasty, these are family friendly and a great option to have available for a make-it-yourself taco bar.

You only need 10 minutes of prep time and in about half an hour, you’ve got a delicious dinner on the table. Topping ideas include: our sour cream sauce, salsa, red onions, corn, black beans, green onions, sweet corn, and avocado.

BBQ Tofu Tacos

Prep time: 10 minutes
Cook time: 20 minutes
Serves: 4

Ingredients 

12 oz. firm tofu, crumbled
1 T. olive oil
1 t. smoked paprika
1/2 t. ground cumin
1/4 t. dried oregano
1/4 c. BBQ sauce
1 c. sour cream
1/4 c. fresh parsley, chopped
2 scallions, thinly sliced
2 t. lemon juice
8 small tortillas
1 c. salsa (Try our easy homemade salsa recipe here.)
Sea salt and black pepper to taste

Directions

Preheat the oven to 400°F.

Line a rimmed baking sheet with a piece of parchment paper. 

Add crumbled tofu to the prepared baking sheet and toss with olive oil, smoked paprika, cumin, and oregano. 

Season to taste with salt and pepper.

Bake until browned and crispy, approximately 15-20 minutes. 

Remove tofu from the oven and mix in BBQ sauce. 

Return to oven and bake for an additional 5-10 minutes. 

In the meantime, in a small bowl, mix sour cream, parsley, scallions, and lemon juice. Season with salt and pepper to taste. 

Heat tortillas in the oven or in a skillet and fill with BBQ tofu, sour cream sauce, and homemade salsa. 

Garnish with extra parsley on top. Enjoy!
