Couscous & Green Apple Salad

This fresh and delicious Couscous & Green Apple Salad is a perfect side dish or light lunch main dish. We love this salad for any time of the year and it complements pretty much any main course.

If you want, you can even swap out seasonal apples in place of the green apples. Or for a burst of color, use red, green, and yellow apples. Pears are a lovely addition or substitute for the apples as well.

Couscous & Green Apple Salad

Ingredients:

Pearl Couscous – this is known in some regions as Israeli couscous

Sea Salt

Granny Smith Apples

Italian Parsley

Dill – fresh

Mint- fresh

Basil – fresh

Lemon

Extra virgin olive oil

Directions:

  1. Cook couscous in lightly salted water according to package instructions. Couscous should be prepared al dente. When finished cooking set aside.
  2. In a large serving bowl add apples, parsley, dill, mint and basil. Toss to combine.
  3. Add couscous to bowl. Combine with apple and herb mixture.
  4. Prepare dressing by combining lemon juice, olive oil and salt in a small bowl or jar. 
  5. Pour dressing over salad mixture and gently toss to combine.
  6. Serve immediately.

Ingredients
  

  • 1 cup Pearl Couscous
  • Sea Salt to taste
  • 2 Granny Smith Apples
  • 1 cup Italian Parsley chopped
  • 1 cup Fresh Dill chopped
  • 6 leaves fresh mint chopped (can use one or two more if desired)
  • 6 leaves fresh basil chopped (can use one or two more if desired)
  • 1 lemon juiced
  • 1/4 cup extra virgin olive oil

Instructions
