Chocolate chip cookies are a classic (and for a reason!). Making them into mint chocolate chip cookies was genius. But this is the next step, the latest evolution – Baileys mint chocolate chip cookies!
That’s right, you heard correctly.
Everything perfect about chocolate and mint and Baileys, wrapped up in one perfect morsel!

Do These Baileys Mint Chocolate Chip Cookies Contain Alcohol?
In short, no!
Thanks to the magnificent creation of Baileys Irish Cream Baking Chips, you can have all of the flavour and even smell of Baileys without any of the alcohol.
Really, that means you can indulge in these delicious treats just about all you want (just ignore the sugar, we won’t tell!).
Baileys Mint Chocolate Chip Cookies Recipe
Yields 16 cookies
Ingredients
- 1 1/2 cups all purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, room temperature
- 1/2 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg, room temperature
- 1 tsp vanilla extract
- 1 tsp mint extract
- 1 cup Baileys Irish Cream Baking Chips
- 1 cup white chocolate chips
Directions
Preheat the oven to 350°F. Line two baking sheets with parchment paper.
In a small bowl add the flour, baking soda and salt. Mix to combine, then set aside.
In the bowl of a stand mixer, add the butter and both sugars. Beat on medium for 1-2 minutes, scraping the bowl as needed.
Add egg, vanilla extract, and mint extract. Beat until combined.
Slowly begin to add the flour mixture, beating until just combined.
Add the Baileys chips and white chocolate chips.
Mix to combine on low.
Scoop golf ball sized portions of dough (approximately 2 tablespoons) and place them a couple inches apart on the cookie sheets.
Bake the cookies for 7-10 minutes.
Allow the cookies to cool completely.
