Air Fryer Potato Skins

You aren’t going to believe how easy it is to make these Air Fryer Potato Skins. This is such a delicious snack idea and you only need 4 ingredients to make it.

This is the perfect snack for after school, while watching movies, or when taking a break during family game night. With some raw veggies and dip on the side, this makes a great lunch too!

Air Fryer Potato Skins Recipe: Only 4 Ingredients!

Although this is only 4 ingredients, you can, of course, customize this recipe any way you want. We love to serve them with a dollop of sour cream on top. Other additions could be leftover vegetables you have on hand like corn, peas, broccoli, cauliflower, green beans, spinach, or asparagus. You can substitute Greek yogurt for sour cream if you’d like.

Instead of sour cream (or along with it), top them with some guacamole, caramelized onions, or cottage cheese. Add some tuna for a riff on a tuna melt or some corned beef and sauerkraut to make a Rueben potato skin. You can even throw some baked beans on top for another yummy variation!

Ingredients:

  • 6 small baking potatoes
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup bacon bits
  • Thinly sliced chives

Directions:

Bake potatoes in the air fryer for 20 minutes at 400 F.

Once the potatoes are done, slice each one in half.

Scoop out some of the flesh from inside the potato. You want to make sure to leave a good amount around the edges.

Sprinkle each potato half with cheese, then sprinkle with bacon bits.

Place them in a single layer back in your air fryer. Cook for 5 minutes at 400 F.

Sprinkle with chives, then serve & enjoy!
