Rainbow Poke Cake

This simple rainbow poke cake is easy to make using a boxed cake mix. Moist, delicious, and so pretty, you can serve this cake for many occasions.

The colors make it perfect for spring and summer, Easter, St. Patrick’s Day, and so much more. When you serve this, your friends and family are going to love the surprise of pudding inside!

Rainbox Poke Cake

Makes 12 servings

Prep time: 15 minutes

Baking time: 25 minutes

Cooling time: 10 minutes

Chilling time: 1 hour

Ingredients:

  • 1 box, 15.25 oz) French Vanilla cake mix
  • 1⁄2 C vegetable oil
  • 3 large eggs
  • 1 C water
  • Neon Blue gel food coloring, Lime Green gel food coloring, Dark Pink gel food coloring, Orange gel food coloring
  • 1 – 3.4 oz French vanilla instant pudding
  • 3 C whole milk
  • 1 container – 16 oz Cool Whip
  • 1 container of sprinkles (I used pastel Easter sprinkles)

You’ll also need: 1 large piping bag with a star tip

Directions:

Preheat oven to 350 degrees and spray a 13×9 baking dish with baking spray (like Pam).

Mix together the cake mix, eggs, oil, and water until combined and smooth

Divide the batter between 4 small bowls

Mix in a few drops of each color into their own bowls

Spoon drops of each colored batter into the baking dish

Once done, using a butterknife or bamboo skewer, lightly swirl the batter a few times to create colorful swirls

Bake for approximately 25 minutes.

Remove from the oven when fully baked, and set aside to cool for 10 minutes

Using the bottom of a wooden spoon handle, poke several holes all throughout the cake

Pour the pudding over the cake and spread the pudding into the holes. You may need to lightly press the pudding down using a rubber spatula to ensure that the pudding actually goes into the holes

Place the cake into the fridge for an hour to allow it to completely cool before piping dollops of whipped cream on top

Once the cake is cooled, spoon Cool Whip into the piping bag.

Pipe Cool Whip onto the entire cake and sprinkle the sprinkles all over the top of the cake
