Strawberry No Bake Cheesecake

If you’re like me, you want to avoid using your oven as much as possible during the summer. This Strawberry No Bake Cheesecake is absolutely scrumptious and there’s no oven involved in making it.

With only about 15 minutes of prep time, this is a really easy dessert to make. Just remember to plan ahead as there is about 3 hours of chilling time needed.

Strawberry No Bake Cheesecake 

Ingredients:

2 cups / 10 oz graham crackers or cookies of your choice  (Try Oreos or digestives)

½ cup butter

1 cup powdered sugar

3 packages cream cheese (8 oz each)

8 oz. Cool Whip

1 ½ cups of strawberries 

1 package strawberry flavour gelatin (try using a different flavor for a variation on this!)

Instructions:

Prepare the crust: Add graham crackers (or other cookies) to a food processor and pulse into fine crumbs. Alternatively, you can crush them in a large Ziploc bag using rolling pin.

Transfer the crumbs into a bowl; add melted butter.

Mix everything together and press the crumb mixture into your 8” springform pan into an even layer. Refrigerate for about 20 minutes. 

Prepare the cake batter: Add cream cheese, whipped cream, and sugar to a large mixing bowl. Mix until combined and creamy.

Prepare gelatin following instructions on the package. Chill until thickened but not fully set (about 20 minutes) and add to the batter. Use a hand mixer to mix until incorporated.

Assemble: Pour the cheesecake mixture over the prepared crust.

Refrigerate for at least 2 hours.

Place whole or diced strawberries on top before serving. Enjoy!
