If it’s citrus-flavored, it’s pretty much a hit with me. That’s why when I first saw this lemonade cookies recipe, I knew I had to try it.
There’s just something so cheerful and uplifting about citrus flavors and lemon, in particular, makes me think of spring and summer. Take one bite of these lemonade cookies and you’ll be transported to a warm summer’s day, relaxing on the front porch swing. Sweet, bright, and tangy, they’re incredibly delicious and easy to make.
Lemonade Cookies
INGREDIENTS:
1 cup butter- softened
1/2 cup white sugar
1/2 cup brown sugar
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon vanilla
1/3 cup thawed lemonade concentrate
TOPPING:
1/2 cup thawed lemonade concentrate
DIRECTIONS:
In a large bowl, cream butter and sugar until fluffy
Add eggs, beating well
Combine flour and baking soda
Add lemonade concentrate – mix well
Form your cookie dough into even balls. A cookie maker or cookie scoop makes this easier.
Place each of them on cookie sheets. Flatten each cookie with a spoon. Bake for 7-8 minutes, or until slightly golden.
Allow to cool on the baking sheet for five minutes then transfer to a baking rack to cool completely. (30-45 min)
Take 1/2 cup of concentrated lemonade and dip each cookie in and out and set them back on the rack for another 15 minutes.
Tip: Sprinkle Sugar on if desired right after the cookie is dunked.
