Grilled Pound Cake, Pineapple & Strawberry Skewers

These Grilled Pound Cake, Pineapple & Strawberry Skewers are a quick and easy dessert idea that is perfect for summer. Grilling the cake and fruit really brings out the flavor. When you put them together – YUM!

These dessert skewers are fun, festive, and delicious. You can even put out the ingredients and let your family or guests assemble their own. As a variation on this recipe, try using peaches and pears – they grill beautifully too!

Grilled Pound Cake, Pineapple & Strawberry Skewers

Prep time: 10 minutes
Cook time: 15 minutes
Serves: 6-8

Ingredients:

1 Pound cake, homemade or store-bought
2 c. Fresh pineapple chunks
3 c. Strawberries, tops removed and halved
1 c. Heavy whipping cream
3 T. Powdered sugar
1 t. Pure vanilla extract

Directions:

Preheat an indoor grill pan or outdoor grill to medium heat.

Cut the pound cake into bite-sized cubes.

Thread onto BBQ skewers, alternating with strawberries and pineapple chunks in between.  

Grill on an outdoor grill or on a lightly greased grill pan until light grill marks form and the fruit begins to soften, 3-4 minutes per side.

In a large bowl, whip the heavy whipping cream with an electric mixer until soft peaks form. Add the powdered sugar and vanilla extract; continue to mix until incorporated. 

Serve the grilled pound cake and fruit with fresh whipped cream.
