Garlic Parmesan Roasted Zucchini

This quick, easy, and delicious recipe for Garlic Parmesan Roasted Zucchini is perfect as a side dish or snack. If you’re looking for a low carb recipe that’s really tasty, this is an ideal dish for you!

Only five ingredients are needed to make these and yet they are packed with flavor. I could eat this every day!

Garlic Parmesan Roasted Zucchini

Try serving this Garlic Parmesan Roasted Zucchini as a side dish with this marinated grilled chicken breast.

Prep time: 10 minutes

Cook time: 10 minutes

Equipment needed:

Measuring cups and spoons, Cutting board, knife, baking sheet, silicone brush

Ingredients:

  • 3 medium zucchini
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/4 cup parmesan cheese, divided
  • 1 tbsp fresh parsley, chopped

Directions:

Preheat the oven to 400 degrees, and coat a baking sheet with ½ tbsp of olive oil.

Slice the zucchini into ½ inch slices, and arrange on the baking sheet.

Chop the parsley, set aside. Note: If you’re not fond of parsley, other herbs work well here too. I really like basil or an Italian seasoning blend.

Brush the remaining ½ tbsp of olive oil over the top of the zucchini slices.

Sprinkle with garlic and parmesan, reserving 1 tbsp to sprinkle later.

Bake for 9 minutes, turn broiler to high, and broil for 1 minute.

Remove from the oven and sprinkle with the remaining parmesan and chopped parsley.
