Servings: 12 cupcakes

Prep: 30 minutes| Cook Time: 16 minutes| Total Time: 46 minutes

Cupcake Ingredients:

1 cup flour

½ cup cocoa powder

½ tsp. Baking soda

¼  tsp. Baking powder

½ cup unsalted butter, room temp

1 cup sugar

2 large eggs

¾  cup milk

2 tsp. vanilla extract

Frosting Ingredients:

½ cup unsalted butter (room temp)

2 cups powdered sugar

Green food coloring

Candy eyes

Chocolate sprinkles

Black decorating gel

Directions for Cupcakes:

Preheat oven to 350 degrees F. Add cupcake liners to a 12 serving cupcake pan, and set aside.

In a medium mixing bowl, whisk together flour, baking powder, baking soda and cocoa powder. Set aside.

Add vanilla extract to milk. Set aside.

Add butter to a large mixing bowl, and beat with an electric mixer until creamy.

Pour in sugar and mix until well combined.

Add eggs and beat until smooth and creamy.

Scrape sides of bowl with a rubber spatula and mix again to ensure all ingredients are well combined.

With mixer speed set on LOW, gradually add dry ingredients and milk/vanilla mixture, and mix slowly until combined. Increase speed and mix until smooth and fluffy.

Using a large spoon, divide batter evenly into prepared cupcake pan, filling about ¾ full.

Bake on 350 F. for 16 minutes, or until a toothpick inserted in the center comes out clean.

Place each cupcake on a wire cooling rack to cool.

Directions for Frosting:

Add butter and powdered sugar to the bowl of an electric mixer and mix until combined.

If mixture seems too dry, a splash of milk can be added to moisten.

Beat frosting until fluffy.

Add green food coloring until desired shade of green is reached.

Add frosting to a piping bag fitted with a large, round cupcake tip, and swirl on frosting.

Dip top of frosting in chocolate sprinkles for Frankenstein’s hair.

Add 2 candy eyes on each cupcake.

Draw stitches on one side of Frankenstein’s face using the black decorating gel. Draw a single line and pull it outwards in multiple direction using a toothpick to give the “stitched” look.
