Ingredients
  

Cupcake Ingredients:

  • 1 cup flour
  • ½ cup cocoa powder
  • ½ tsp. Baking soda
  • ¼ tsp. Baking powder
  • ½ cup unsalted butter room temp
  • 1 cup sugar
  • 2 large eggs
  • ¾ cup milk
  • 2 tsp. vanilla extract

Frosting Ingredients:

  • ½ cup unsalted butter room temp
  • 2 cups powdered sugar
  • Green food coloring
  • Candy eyes
  • Chocolate sprinkles
  • Black decorating gel

Instructions
 

  • Preheat oven to 350 degrees F. Add cupcake liners to a 12 serving cupcake pan, and set aside.
  • In a medium mixing bowl, whisk together flour, baking powder, baking soda and cocoa powder. Set aside.
  • Add vanilla extract to milk. Set aside.
  • Add butter to a large mixing bowl, and beat with an electric mixer until creamy.
  • Pour in sugar and mix until well combined.
  • Add eggs and beat until smooth and creamy.
  • Scrape sides of bowl with a rubber spatula and mix again to ensure all ingredients are well combined.
  • With mixer speed set on LOW, gradually add dry ingredients and milk/vanilla mixture, and mix slowly until combined. Increase speed and mix until smooth and fluffy.
  • Using a large spoon, divide batter evenly into prepared cupcake pan, filling about ¾ full.
  • Bake on 350 F. for 16 minutes, or until a toothpick inserted in the center comes out clean.
  • Place each cupcake on a wire cooling rack to cool.
