Copycat McDonalds Hot Cakes

If you’re a big fan of McDonalds Hot Cakes, you have got to try this copycat version. Now that McDonalds has done away with their all day breakfast, this will give you the chance to have their yummy hot cakes anytime.

These pancakes are quick and easy to make and they freeze well. We like to make ahead a large batch and heat them up in the toaster or microwave for a quick weekday breakfast. Serve them with these tasty air fryer sausage patties. So easy and delicious!

Copycat McDonalds Hot Cakes

Prep: 5 mins

Cook Time: 10-15 mins

Total: 20-25 mins

Yield: 14-16 pancakes

Equipment

Skillet or griddle

Medium – large sized bowl

Measuring Cups and Spoons

Spatula

Hand held mixer of whisk

Ingredients

2 eggs, large

¼ cup granulated sugar

¼ cup unsalted butter, melted

1 tsp vanilla extract

1 tbsp Olive Oil

2 cups whole milk 

2 ½ cups all purpose flour, leveled

3 tsp baking powder

½ tsp salt 

Non Stick Cooking Spray

Instructions

Whisk together eggs, sugar and melted butter until combined. 

Add in the vanilla, oil and milk, mix until combined.

Add in the flour, baking powder and salt.

Blend together until batter forms. It will be thick but should not be lumpy.

Spray the center of a skillet or griddle with cooking spray and heat it up.

Spoon 1/3 cup of batter into the center and cook for about 2 minutes

Flip once bubbles appear on the top and cook for an additional 1-1.5 minutes

Repeat with remaining batter

Notes:

For perfectly round and even pancakes, cook one at a time.

You can use vegetable oil in place of olive oil

If the pan begins to burn the cooking spray, rinse the pan under cold water to cool it off

Make sure the heat is set to medium low as this helps preventing uncooked batter in the center.

Storage:

Leftover pancakes can be frozen. Separate each with parchment and place inside of a Ziploc bag for easy access.

Reheat for one minute in the microwave
