This classic poolside dip is a delicious summertime recipe. It was so named because it is light, creamy, and packed with flavor, making it the perfect snack for a day spent lounging by the pool.

We like to take it with us on picnics or to serve it for backyard BBQs or other summer gatherings. Of course, you’re not limited to making this during the summer. We love this delicious dip anytime of the year.

Classic Poolside Dip

Serve with crackers, veggies, or chips.

Servings: 8-12

Prep time: 10 minutes

Storage: store refrigerated in an airtight container for up to 2 days

Ingredients:

  • 16 oz cream cheese, softened (2 – 8 oz packages)
  • 1 oz packet dry ranch seasoning
  • 1 red bell pepper, finely diced
  • 1 jalapeno pepper, finely diced
  • 1 – 15 oz can corn, drained
  • 1 – 4.25 oz can chopped black olives, drained
  • 2 green onions, diced – for topping

Directions:

Cut the red pepper and the jalapeno pepper, removing the stems and seeds. (If you want a spicier dip, keep the jalapeno seeds.)

Dice the green onions, set aside.

Mix the cream cheese and ranch seasoning in a large bowl using a hand mixer, until light and creamy.

Add the diced red pepper, diced jalapeno, corn, and olives to the bowl, and stir to combine.

Spoon mixture into serving bowl or dish, and top with diced green onions.

You can serve it right away, or refrigerate until ready to serve.
