Who doesn’t love a great low-prep breakfast or brunch option? This Baked Banana Bread Oatmeal recipe is delicious, comforting, hearty, and can serve a small crowd.
This recipe is so easy – you just mix and bake. You can also easily customize it to anyone’s taste with lots of great topping options.

Baked Banana Bread Oatmeal Notes:
This is such an easy recipe! For the most part, it’s pour and bake, and then you’ve got yourself a tasty breakfast, brunch, or anytime treat.
There are some changes you can make depending on dietary needs or personal preferences:
- For a vegan version of this oatmeal, use a vegan egg substitute in place of the eggs and unsweetened nut milk in place of the cow milk.
- I used walnuts in this recipe because I like them and they’re typically used in banana bread. But the nuts can be left out or pecans can be used instead if you prefer.
Baked Banana Bread Oatmeal Recipe
Makes 8 servings
Prep time: 10 minutes
Cook time: 45 minutes
Ingredients:
- ½ cup packed brown sugar
- ½ teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 ½ cups over ripe bananas, mashed
- 2 eggs
- ½ teaspoon vanilla extract
- 2 ½ cups old fashioned rolled oats (not quick oats)
- 2 cups milk
- 1 cup chopped walnuts, divided (optional)
- Suggested toppings (optional): extra chopped walnuts, flaked coconut, fresh berries, slices of banana, ground cinnamon or nutmeg, brown sugar, warm milk, whipped cream, whipped coconut cream
Directions:
1. Preheat the oven to 350 F. Grease a 2-quart glass baking dish with non-stick cooking spray.
2. In a large mixing bowl, whisk together the brown sugar, salt, baking powder, and cinnamon. Add the mashed bananas, eggs, and vanilla extract; stir well.
3. Stir in the oats, milk, and ¾ cup of the chopped walnuts.
4. Pour the oatmeal mixture into the prepared baking dish. Sprinkle the top of the oatmeal with the reserved ¼ cup of walnuts, then cover the dish with foil.
5. Bake for 30 minutes. Remove the foil and bake the oatmeal for an additional 15 minutes.
6. Serve warm. Store leftover oatmeal in the refrigerator for up to 3 days.
