Peanut Butter Espresso Truffles

Who doesn’t love biting into a fudgy, decadent truffle? Here’s how to put an espresso twist on this classic dessert!

Ingredients

  • 1 cup creamy peanut butter
  • 2 cups powdered sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon instant espresso powder
  • 1/2 teaspoon vanilla extract
  • 8 ounces dark chocolate, melted
  • Sea salt for garnish

Instructions

Combine the peanut butter, powdered sugar, cocoa powder, espresso powder, and vanilla extract in a bowl. Mix until smooth and firm. Then, roll the mixture into small, bite-sized balls. Chill them in the refrigerator for 30 minutes. Once firm, dip and coat the balls in melted (ideally dark) chocolate. Sprinkle a pinch of sea salt on top before the chocolate sets. Chill again until the coating is solid, and dessert is served!

Coffee Cheesecake

It doesn’t get better than cheesecake. This world-favorite dessert is the perfect canvas for showcasing a rich coffee profile, using both brewed and instant coffee. We recommend brewing a dark roast, since coffee roast level impacts flavor, and dark is the boldest, most satisfying one.

Ingredients

1 1/2 cups graham cracker crumbs

1/4 cup melted butter

2 cups cream cheese, softened

3/4 cup granulated sugar

1/3 cup brewed strong coffee, cooled

2 tablespoons instant coffee granules

1 teaspoon vanilla extract

2 large eggs

Instructions

Preheat your oven to 325°F (160°C). Mix the graham cracker crumbs and melted butter, then press into the bottom of a springform pan to form the crust. In a separate bowl, beat the cream cheese and sugar until smooth. Add the brewed and instant coffee and vanilla extract to the cream cheese mixture and blend until combined. Beat in eggs one at a time. Pour the mixture onto the crust and smooth the top. Bake for 40–45 minutes or until the cheesecake is set but still slightly jiggles in the center. Cool completely, then refrigerate for at least 4 hours before serving.
