I have overnight oats multiple times each week. They are so easy to make and you can prep ahead of time so in the morning, you just grab and go. This S’mores Overnight Oats Recipe is one of my favorites.

S’mores Overnight Oats Recipe
Ingredients
1/2 cup Rolled Oats
1/2 cup Milk (or you can use International Delights S’mores Coffee Creamer – if using this, delete the honey) – *you can also substitute chocolate milk if you want it extra chocolatey
Honey to sweeten (I used 1/2 tbsp but this is optional)
1 tbsp Chocolate (chop up a chocolate bar or use chocolate chips)
A Graham Cracker, crumbled (or use graham cracker crumbs, about 1 tbsp)
1 tbsp Mini Marshmallows
Directions
Pour the oats into a jar. Pour the milk over the oats and stir. Add in the honey, if using.
Now you’ve got options. Some people like to mix the graham crackers right into the oats mixture, while others prefer to layer them on top of the oats. If you’re going to do this, I suggest placing a layer of chocolate chips on the oats and then putting the graham cracker crumble on top of that. The chocolate will help keep the graham crackers from getting soggy.
Place in the fridge overnight.
When ready to serve, top with mini marshmallows.
