Baked Corn Casserole

Side dishes don’t get much easier than this baked corn casserole. You basically just dump in the ingredients, give it a stir and bake. It’s so easy that it’s a great recipe for kids to help make!

This tasty corn side dish goes well with nearly anything. Serve it with our apple walnut stuffed pork tenderloin or stuffed beef tenderloin with portobello mushrooms. Perfect for family dinner or a special occasion.

Baked Corn Casserole

YIELD: 8 SERVINGS 

Ingredients:

A 15 oz. can of yellow corn, drained
A 15 oz. can of creamed corn
1 cup of sour cream
1/4 cup melted butter
1 cup cheddar cheese
1 box (8.5 oz) of Jiffy Corn Muffin mix 

Instructions:

1. Add the can of corn and creamed corn into a large bowl.

2. Next, add the sour cream. 

3. Pour in the melted butter. 

4. Then, add the corn muffin mix.  (Seriously, this is so easy, right?)

5. Now it’s time to add the cheddar cheese. 

6. Mix well. 

7. Add mixture to an oven-safe dish and bake for 45 minutes at 350 degrees. I like to spray the dish with cooking spray before putting the corn mixture in it for ease of cleanup.

8. Serve this delicious corn casserole & enjoy!
