Cinnamon Roll Baked Oats

These cinnamon roll baked oats are packed with flavor! With only 5-10 minutes of prep time and some simple ingredients you probably already have on hand, this makes a simple breakfast option.

I just love baked oats. They’re such an easy way to make a large batch of oatmeal to serve a crowd for a special breakfast or brunch. Or just as a hot meal every day.

Cinnamon Roll Baked Oats

Prep time: 5-10 min

Cook: 45 mins

Cool: 15 min

Equipment

Measuring Cups and Spoons

Ingredients

1 tbsp unsalted butter, softened or non stick spray

5 cups rolled oats

1 1/2 cups toasted walnuts, chopped

1 tbsp ground cinnamon

2 tsp baking powder

1 tsp kosher salt

4 1/2 cups milk

½ cup heavy cream

½ cup pure maple syrup

2 eggs, beaten lightly

1 tbsp vanilla extract

Icing

½ cup unsalted butter, softened

4 oz cream cheese, room temp

1 cup powdered sugar

2 tbsp heavy cream of flavored coffee creamer

Instructions

Preheat the oven to 375F

Butter or spray your pan

In a large bowl whisk together oats, walnuts (save 1/3 cup for top), cinnamon, baking powder, and salt. Place in baking pan.

In a separate bowl, mix together milk, heavy cream, vanilla, eggs, and maple syrup

Pour the wet mixture on top of the dry mixture and stir to make sure everything is incorporated (no dry spots)

Bake for 40-45 mins until golden brown and no liquid is left on the surface

Make the frosting by mixing cream cheese and butter until smooth

Add in the powdered sugar and heavy cream or coffee creamer

Let baked oats cool for at least 10-15 mins before cutting into squares and drizzling frosting on top.

Sprinkle on extra walnuts
