A classic cucumber salad has a mayonnaise-based dressing on it. They are delicious but this is a scrumptious variation. This really easy dill cucumber salad packs a lot of flavor without overwhelming the cucumber. The citrus really perks up the taste. Serve this at a backyard BBQ, take it along for a picnic, or just use as a side dish that goes beautifully with nearly any main dish. This is a great make-ahead dish - in fact, it's even better to prepare the dressing in advance if possible to give the flavors more time to develop.
If you prefer a thicker dressingcut down on the amount of lemon juice in the dressing.
Salad Ingredients:
2large cucumberssliced and cut into half rounds
½medium red onionsliced thin
1T.fresh dillroughly chopped
Instructions
Prepare the dressing by whisking all of the ingredients together in a medium bowl until thoroughly combined. Taste and adjust seasonings as desired. Set aside.
Add the cucumber, red onion, and roughly chopped fresh dill to a large bowl. Pour the dressing on top and toss to combine. Serve immediately or chill for up to two hours before serving. Enjoy!
