Couscous & Fresh Green Apple Salad

This fresh and delicious Couscous & Green Apple Salad is a perfect side dish or light lunch main dish. We love this salad for any time of the year and it complements pretty much any main course.

Ingredients
  

  • 1 cup Pearl Couscous
  • Sea Salt to taste
  • 2 Granny Smith Apples
  • 1 cup Italian Parsley chopped
  • 1 cup Fresh Dill chopped
  • 6 leaves fresh mint chopped (can use one or two more if desired)
  • 6 leaves fresh basil chopped (can use one or two more if desired)
  • 1 lemon juiced
  • 1/4 cup extra virgin olive oil

Instructions
 

  • Cook couscous in lightly salted water according to package instructions. Couscous should be prepared al dente. When finished cooking set aside.
  • In a large serving bowl add apples, parsley, dill, mint and basil. Toss to combine.
  • Add couscous to bowl. Combine with apple and herb mixture.
  • Prepare dressing by combining lemon juice, olive oil and salt in a small bowl or jar.
  • Pour dressing over salad mixture and gently toss to combine.
  • Serve immediately.
