Filling Ingredients: 4 medium potatoes sliced into 1/4” slices 1-1/2 cups Half & half 1 tsp Ground nutmeg Kosher salt to taste Freshly ground black pepper to taste Dough Ingredients: 2 large eggs 2 cups all purpose flour 3 tsp baking powder 1 tsp salt 1/2 cup butter cold and cut into small cubes 1/2 cup milk 1/2 cup mozzarella shredded 1/4 cup grated parmesan
Preheat the oven to 400°F.
Lightly grease a 9” pie plate.
Add sliced potatoes, half & half, nutmeg, salt and pepper, to taste. Combine well.
Place pie dish in oven and bake for 20 minutes.
Meanwhile, prepare cobbler dough.
In a large bowl combine flour, baking powder and salt.
Cut in the butter pieces with a pastry blender, 2 forks or with your hands until the mixture becomes crumbly.
Add milk to the bowl and stir with a wooden spoon. Stir in one egg at a time.
Once eggs are combined into mixture, mix in the mozzarella and parmesan cheeses.
Remove potatoes from oven and let cool for 5 minutes.
Drop dough by spoonfuls onto the potatoes.
Bake 20-25 minutes until the cobbler mixture is golden brown and potatoes and soft and cooked through.
