Despite not having any eggs in it, this cake is still really fluffy and delicious. We have also offered options for the dairy products as well so you can make this a vegan cake. Strawberries and bananas go so well together to make a really tasty dessert. This is a really easy cake to make and doesn't require any special baking or decorating skills.
Grease or spray an 8*8 baking dish with nonstick spray.
In a large bowl whisk together granulated sugar, oil, milk and vanilla.
Add in the mashed bananas and stir to combine.
Sift in flour and baking powder.
Use a rubber spatula to gently fold and mix it in.
Add the strawberries right before all of the flour disappears.
Stir until just combined (do not over mix)
Add to prepared baking dish
Bake for 40 mins.
Remove and let cool.
Instructions for the Glaze:
To a small bowl, add powdered sugar, vanilla and heavy cream, stir until combined. Add a tsp of heavy cream to thin it out if its too thick for your preference.

ou can substitute the vegetable oil for liquid coconut oil and change the milk to almond milk to make this Vegan.
