Ingredients
  

  • 6 Mini Cucumbers
  • 3 tsp Salt
  • 1.5 tbsp Soy sauce
  • 1 tsp Garlic crushed
  • 3 tsp Rice vinegar
  • 3 tsp Chinese chili oil
  • 3 tsp Sugar
  • 1 tsp Sesame oil
  • 2 tsp Sesame seeds
  • 2.5 tbsp Green onion

Instructions
 

  • In a small bowl, mix the minced garlic, sugar, sesame seeds and green onion.
  • Add rice vinegar, soy sauce, and both oils. Mix.
  • To make spirals put a cucumber on two chopsticks and cut the cucumbers at an angle but not all the way through. You can also use a decorative knife to create cucumber spirals.
  • Salt cucumbers and leave for 8-12 minutes. Rinse with water.
  • Pour marinade over cucumbers.
  • Serve
