Christmas Linzer Cookies

For these Christmas Linzer cookies, we started with a simple shortbread dough. We layered two rectangles of the shortbread with raspberry jam in between and then decorated them to look like reindeer complete with chocolate antlers and sugar eyes.

Use your choice of red jam for this recipe. We used raspberry but strawberry or cranberry works well too. You can decorate with dark or milk chocolate and your choice of festive sprinkles. Cut into pieces and serve these holiday cookies on your Christmas cookie trays, for parties, or to wrap up and give away as gifts.

Christmas Linzer Cookies

Ingredients:

2 tbsp. powdered sugar in the dough + 1 tsp. for decoration

1 cup flour

1/5 tsp. salt

2 oz. softened butter

2-3 tbsp. raspberry jam

1 1/5 oz. chocolate

8 sugar eyes

1 tsp sprinkles

Instructions

1. Place butter, salt and powdered sugar in a bowl. Вeat with a mixer and beat in egg. Continue beating until smooth. Add some of the flour and knead the dough on low speed. When the dough starts to come together into a ball, transfer it to a board and knead with your hands. 

2. Divide the dough in half and roll each half into a 1/4-inch-thick layer. Form the dough into 3.5 x 7-inch rectangles. Transfer the rectangles to a baking tray lined with baking paper. Make 4 holes in one of the rectangles as in the photo. Chill the pieces in the refrigerator for 30 minutes. Bake in a 375°F oven for about 20-25 minutes.

3. Cool the cookies. Brush the cookies without holes with raspberry jam and cover with a second cookie. Add a little jam to the holes. Sprinkle powdered sugar through a sieve.

4- Melt the chocolate in the microwave on pulse mode. Transfer the chocolate to a syringe and pipe reindeer antlers. Attach the eyes and sprinkle the antlers with sprinkles.

Cut into pieces with a sharp knife and serve.
