Firecracker Fudge

The kids are going to have tons of fun helping to make this tasty firecracker fudge recipe. Rich white chocolate combined with fruity pop rocks become a a whole lot of fizzy, popping fun!
This is such an easy snack recipe that you can put together in less than 15 minutes. Great for any occasion.

Equipment

  • 8x8 Pan
  • Parchment paper

Ingredients
  

  • 1 Can White Frosting 16 ounces
  • 1 ½ Cups White Chocolate Chips
  • 3 Packages Blue Pop Rocks
  • 3 Packages Red Pop Rocks

Instructions
 

  • Line an 8x8 pan with parchment paper and set aside.
  • Place the chocolate chips in a medium, microwave safe mixing bowl.
  • Microwave for up to 3 minutes, pausing every 30 seconds to stir, adjusting the chocolate chips on the bottom of the bowl, to the top.
  • Once the chocolate chips are smooth and creamy without lumps when stirred, set aside.
  • Remove the lid and film from the frosting container and microwave it for 1 minute.
  • Pour the frosting immediately into the melted white chocolate bowl and stir vigorously until fully combined.
  • Add two packets of blue pop rocks and two packets of red to the mixture and gently fold them in until nicely distributed.
  • Pour the mixture into the prepared pan and spread even.
  • Sprinkle the remaining pop rocks over the top of the fudge.
  • Set the fudge aside and let it solidify for 8 hours or until hardened.
  • Slice and enjoy!

Notes

Be sure to remove every bit of the foil on top of the frosting container before putting it in the microwave. If not, you could cause sparking and flames within your microwave. It’s really easy to get it all removed. If you’re worried, just put the frosting in a microwave safe bowl and melt it that way.
The amount of pieces you get from the fudge will depend on how large or small you cut them. I tend to cut 1-2-inch pieces.
It’s important to use the parchment paper or you may have issues getting it out of the pan smoothly. If you have no parchment paper, at least use cooking spray on the pan before making the fudge.
Any flavor of white frosting from the store will do the job.
The pop rocks will do a lot of popping and crackling when you add it to the fudge and it’s honestly a lot of fun. This is the perfect fudge to make with the kids because it feels like a mini fireworks show is happening while you’re stirring it.
When you add the frosting to the chocolate, it will feel like it’s trying to seize up. It’s not, just stir it well and it will loosen up.
Store fudge in an airtight container in a cool, dry pantry for up to 5 days. Store in an airtight container in the fridge, for up to 2 weeks. Store in an airtight container in the freezer for up to 3 months.
