This meatloaf cupcakes recipe takes Mom's classic meatloaf recipe and kicks it up a notch with a delightful ketchup topping & mashed potatoes to finish it all off!
Preheat oven to 350 F. Prepare a muffin pan by lining each cup with a muffin liner.
In a large mixing bowl, mix ground beef, eggs, crackers, garlic, salt, pepper, oregano, thyme, and 1/4 cup ketchup.
Fill each muffin liner with meat mixture.
Bake for 30-40 minutes.
While meatloaf cupcakes are baking, mix the remaining ketchup and the brown sugar together.
When meatloaf cupcakes are done, remove from oven and "frost" with ketchup mixture. Then, top with mashed potatoes. (You can use a knife or a piping/Ziploc bag.)
