This meatloaf cupcakes recipe takes Mom's classic meatloaf recipe and kicks it up a notch with a delightful ketchup topping & mashed potatoes to finish it all off!

Ingredients
  

  • 2 lb ground beef
  • 2 eggs
  • 1 cup Club crackers or Ritz crackers
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 cup ketchup divided
  • 1/4 cup brown sugar
  • 2 cups mashed potatoes
  • Bacon bits I prefer the ones made of real bacon

Instructions
 

  • Preheat oven to 350 F. Prepare a muffin pan by lining each cup with a muffin liner.
  • In a large mixing bowl, mix ground beef, eggs, crackers, garlic, salt, pepper, oregano, thyme, and 1/4 cup ketchup.
  • Fill each muffin liner with meat mixture.
  • Bake for 30-40 minutes.
  • While meatloaf cupcakes are baking, mix the remaining ketchup and the brown sugar together.
  • When meatloaf cupcakes are done, remove from oven and "frost" with ketchup mixture. Then, top with mashed potatoes. (You can use a knife or a piping/Ziploc bag.)
  • Sprinkle with bacon bits.
  • Serve & enjoy!
