Pumpkin Seed Brittle

  • 2 tablespoons butter
  • 1 cup sugar
  • 1/2 tsp salt
  • 3/4 cup pumpkin seeds


  • Melt the butter. Add sugar and salt.
  • Stir over low to medium heat until they are dissolved completely.
  • Remove the pan from the heat and stir in the seeds.
  • Make sure the seeds are well coated.
  • Line a rimmed baking sheet with parchment paper.
  • Pour in the mixture, using a rubber spatula if needed to spread it out.
  • Refrigerate for 30 minutes. Break into pieces.
