Baileys Pound Cake

Ingredients
  

  • Pam baking spray
  • 1 cup unsalted butter softened
  • 1 cup sugar
  • 1 tsp kosher salt
  • 3 large eggs
  • 1 cup Baileys Original Irish Cream liqueur
  • 2 1/4 cup flour
  • 2 1/2 tsp baking powder

Baileys Glaze

  • 1 1/4 cup powdered sugar
  • 1 Tbsp light corn syrup
  • 2 Tbsp Baileys
  • 2 tsp milk

Instructions
 

  • Preheat oven to 350 degrees and spray a 9x5 loaf pan with baking spray.
  • Using a standing mixer, cream together the butter, sugar, and salt until combined and smooth.
  • In a large bowl, whisk the eggs and Baileys until combined. Gradually mix into the butter mixture until combined.
  • In a medium bowl, whisk together the flour and baking powder. Gradually mix into the wet ingredients until combined.
  • Pour batter into the prepared baking pan. Bake for 50-65 minutes. If not done and starts to brown, cover with foil and bake for 10 more minutes.
  • Allow to cool completely.

Glaze Directions

  • In a large bowl, whisk all glaze ingredients together until combined.
  • Pour over the loaf and allow the glaze to harden.
  • Cut the cake into slices and enjoy!
