Baileys Mint Chocolate Chip Cookies

- 1 1/2 cups all purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter room temperature
- 1/2 cup light brown sugar packed
- 1/4 cup granulated sugar
- 1 large egg room temperature
- 1 tsp vanilla extract
- 1 tsp mint extract
- 1 cup Baileys Irish Cream Baking Chips
- 1 cup white chocolate chips
Preheat the oven to 350°F. Line two baking sheets with parchment paper.
In a small bowl add the flour, baking soda and salt. Mix to combine, then set aside.
In the bowl of a stand mixer, add the butter and both sugars. Beat on medium for 1-2 minutes, scraping the bowl as needed.
Add egg, vanilla extract, and mint extract. Beat until combined.
Slowly begin to add the flour mixture, beating until just combined.
Add the Baileys chips and white chocolate chips.
Mix to combine on low.
Scoop golf ball sized portions of dough (approximately 2 tablespoons) and place them a couple inches apart on the cookie sheets.
Bake the cookies for 7-10 minutes.
Allow the cookies to cool completely.
