Baileys Mint Chocolate Chip Cookies

Ingredients
  

  • 1 1/2 cups all purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter room temperature
  • 1/2 cup light brown sugar packed
  • 1/4 cup granulated sugar
  • 1 large egg room temperature
  • 1 tsp vanilla extract
  • 1 tsp mint extract
  • 1 cup Baileys Irish Cream Baking Chips
  • 1 cup white chocolate chips

Instructions
 

  • Preheat the oven to 350°F. Line two baking sheets with parchment paper.
  • In a small bowl add the flour, baking soda and salt. Mix to combine, then set aside.
  • In the bowl of a stand mixer, add the butter and both sugars. Beat on medium for 1-2 minutes, scraping the bowl as needed.
  • Add egg, vanilla extract, and mint extract. Beat until combined.
  • Slowly begin to add the flour mixture, beating until just combined.
  • Add the Baileys chips and white chocolate chips.
  • Mix to combine on low.
  • Scoop golf ball sized portions of dough (approximately 2 tablespoons) and place them a couple inches apart on the cookie sheets.
  • Bake the cookies for 7-10 minutes.
  • Allow the cookies to cool completely.
