Watermelon Pizza

Watermelon pizza is a healthy snack idea that is light and refreshing on a hot summer day. Quick and easy to prepare too!

Ingredients
  

  • 1 slice watermelon
  • 1/4 cup raspberries
  • 1/4 cup blueberries
  • 1/4 cup strawberries
  • 1/4 cup cherries
  • 1/2 cup Greek yogurt
  • 1/2 tsp vanilla
  • 1 tsp lemon juice

Instructions
 

  • Slice a watermelon so that you have about a 2-3 inch slice. I like to use the small round seedless watermelons.
  • Cut up the fruit you've chosen. I'm using assorted berries and cherries but you can substitute any fruit you'd like. You want between 2/3 and 1 cup of fruit as a topping.
  • Mix the yogurt with the lemon juice and vanilla if desired. Plain yogurt is tasty too! Spread the yogurt over the surface of the watermelon slice.
  • Top with the cut up fruit. You can also set up the ingredients self serve style and let each person build their own watermelon pizza!
  • Cut into wedges and serve.

Notes

If you'd rather use a sweeter sauce, you can mix 1/4 cup Greek yogurt with 4 tablespoons of cream cheese, 1 tablespoon of powdered sugar, and a splash of lemon or orange juice. This will, of course, change the nutrients and calorie count.
