Meatloaf Cupcakes Recipe

I loved my Mom’s meatloaf. I think mine is pretty close to hers but you know, there’s nothing like Mom’s cooking. It was even better when she made her meatloaf recipe into cute little meatloaf muffins. This Meatloaf Cupcakes Recipe takes it one step further by topping them with mashed potato frosting. YUM!

In between the meat and the mashed potato is a delightful ketchup mixture that brings the whole dish together. Once you’ve tried these meatloaf cupcakes, you may not want to eat meatloaf any other way. And the kids will be excited to get their own individual little loaf all for themselves!

Meatloaf Cupcakes Recipe

Ingredients:

  • 2 lb ground beef
  • 2 eggs
  • 1 cup Club crackers (or Ritz crackers)
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 cup ketchup, divided
  • 1/4 cup brown sugar
  • 2 cups mashed potatoes
  • Bacon bits (I prefer the ones made of real bacon)

Directions:

Preheat oven to 350 F. Prepare a muffin pan by lining each cup with a muffin liner.

In a large mixing bowl, mix ground beef, eggs, crackers, garlic, salt, pepper, oregano, thyme, and 1/4 cup ketchup.

Fill each muffin liner with the meat mixture.

Bake for 30-40 minutes.

While meatloaf cupcakes are baking, mix the remaining ketchup and the brown sugar together.

When the meatloaf cupcakes are done, remove them from the oven and “frost” with the ketchup mixture. Then, top with mashed potatoes. (You can use a knife or a piping/Ziploc bag.)

Sprinkle with bacon bits.

Serve & enjoy!
